If you thought potato croquettes were purely a Spanish thing, think again. These Italian-style crochette, filled with provolone cheese, are the perfect appetiser to share this weekend.

Ingredients for five portions

- 500g of broccolini (baby broccoli)

- 400g of potatoes

- 70 g of parmigiano (parmesan cheese)

- Cubed provolone cheese

- one egg

- Breadcrumbs (to coat)

-Salt and pepper to taste

 

Method:

-With a fork, crush the broccolini and combine with the boiled, crushed potatoes, grated parmigiano, egg, breadcrumbs, and salt and pepper.  Work everything together with a spoon until blended.

-Take a spoonful of the mixture and press it lightly in the center.  Add a cube of provolone and close it in the shape of a croquette/meatball.

-Roll the croquettes in the breadcrumbs and bake them at 180˚C/350˚F for 15 minutes.
